Spicy Scallop Hand Rolls

Don't be intimidated by making sushi at home. These spicy scallop hand rolls are easy, interactive, and just elevated enough for date night or a fun dinner with friends. Crisp nori, warm rice, and a creamy scallop filling that feels straight out of your favorite sushi bar, these hand rolls are best enjoyed rolled and eaten right away.

INGREDIENTS: 

Spicy Scallop Mixture

  • 6-8 oz sushi-grade scallops, finely chopped (or substitute sushi-grade salmon or tuna)

  • 1/4 cup Kewpie mayo

  • 1 tbsp sriracha (adjust to taste)

  • 1 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tsp fresh lemon juice

  • 1 tbsp chopped green onion

  • Tobiko, to taste (optional)


Assembling the Hand Rolls

  • Nori sheets

  • Prepared sushi rice, seasoned with rice vinegar, sugar, and salt

  • Optional add-ins: sliced cucumber, avocado, sesame seeds


INSTRUCTIONS: 

  1. Prepare the sushi rice: Rinse sushi rice until the water runs clear. Cook according to package instructions using a rice cooker or stovetop. Once cooked, season with rice vinegar, sugar, and salt, fluff gently, and cover to keep warm.

  2. Make the spicy scallop mixture: Chop your scallops (or sushi-grade seafood of choice) and finely chop green onion. Add the chopped seafood and green onion to a medium bowl, then add the Kewpie mayo, sriracha, soy sauce, sesame oil, and lemon juice and mix until combined. Gently fold in the tobiko (if using), and mix just until combined, but avoid overmixing.

  3. Prep your rolling station: Place a sheet of nori onto a cutting board. Spoon a thin, even layer of warm sushi rice onto one side of the nori, lightly pressing it in place.

  4. Fill and roll: Add a spoonful of the spicy scallop mixture on top of the rice. Layer in cucumber or avocado if using. Roll the nori into a cone shape, sealing the edge with a small amount of soy sauce if needed.

  5. Serve immediately: Hand rolls are best enjoyed fresh—crisp nori, warm rice, and cool, spicy seafood. Enjoy with soy sauce, wasabi, or spicy mayo.
