Coronation Chicken Salad Tea Sandwiches

INGREDIENTS: 

  • 1 rotisserie chicken (or 4 roasted, boneless and skinless chicken breasts)

  • 1/3 cup mayonnaise

  • 1/4 cup mango chutney

  • Juice from 1 lime

  • 2 tsp curry powder

  • 1/4 tsp cinnamon

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1/4 cup golden raisins

  • Sliced sandwich bread

  • Butter (optional)



INSTRUCTIONS: 

  1. Remove skin from the chicken and chop into small cubes. Add to a large bowl.

  2. To the bowl with the chicken, add mayonnaise, mango chutney, lime juice, curry powder, cinnamon, salt, pepper, and golden raisins. Combine thoroughly, adding more seasoning to taste.

  3. On sliced sandwich bread, spread a pat of butter on each piece of bread before adding several small scoops of chicken salad.

  4. Once the sandwich is made, carefully slice off the crusts and cut into small triangles or rectangles.

  5. Serve with tea or champagne, and enjoy!
