Pumpkin Blondies

The better version of pumpkin bread.
PREP: 15 min | COOK: 25-30 min | Serves 10

INGREDIENTS:Â
Wet Ingredients
½ cup (1 stick) butter melted
1 ¼ cup pumpkin puree (canned or homemade)
1 ¼ brown sugar
2 eggs
1 tsp vanilla extractÂ
Dry Ingredients
1 ½ cup all-purpose flour
1 tsp baking powder
1 tsp cinnamon
½ tsp ground nutmeg
¼ tsp saltÂ
Spiced Swirl
½ cup batter
1 tsp cinnamon
½ tsp ground nutmeg
1 tbs granulated sugar
INSTRUCTIONS:Â
Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or vegetable oil and set aside.
Mix the wet ingredients: In a large bowl, combine the melted butter, brown sugar, and pumpkin purée. Stir until smooth, then whisk in the eggs and vanilla extract.
Prepare the dry ingredients:Â In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt until evenly combined.
Combine wet and dry ingredients:Â Gradually add the dry ingredients to the wet mixture in small batches, stirring gently after each addition until just combined. Avoid overmixing.
Make the spiced swirl: Scoop out about ½ cup of the batter into a small bowl. Add a pinch each of cinnamon, nutmeg, and sugar. Mix until a thick, spiced paste forms.
Assemble the blondies:Â Pour the main batter into the prepared baking dish and spread evenly. Spoon dollops of the spiced batter over the top, then use a knife or skewer to swirl and create a marbled effect.
Bake: Place in the oven and bake for 20–30 minutes, or until a skewer or butter knife inserted into the center comes out clean.
Cool and serve:Â Allow the blondies to cool completely in the pan before slicing. Serve plain, or drizzle with glaze icing or top with maple whipped cream.
Tip:Â While delicious warm from the oven, the texture improves after resting. Once cooled, cover and store at room temperature overnight for the best flavor and chew.
Glaze Icing
1 cup powdered sugar
2 tbs milk
½ tsp vanilla extract
Instructions
Combine all ingredients into a mixing bowl and whisk to combine until smooth.Â
Maple Whipped Cream
1 cup heavy whipping cream
2 tbs maple syrup
½ tsp vanilla extract
Instructions
Combine all ingredients into a mixing bowl or stand mixer and combine until stiff peaks are formed. Adjust sweetness level as needed.Â
