INGREDIENTS:

Wet Ingredients

  • ½ cup (1 stick) butter melted

  • 1 ¼ cup pumpkin puree (canned or homemade)

  • 1 ¼ brown sugar

  • 2 eggs

  • 1 tsp vanilla extract

Dry Ingredients

  • 1 ½ cup all-purpose flour

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • ½ tsp ground nutmeg

  • ¼ tsp salt

Spiced Swirl

  • ½ cup batter

  • 1 tsp cinnamon

  • ½ tsp ground nutmeg

  • 1 tbs granulated sugar

INSTRUCTIONS:

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or vegetable oil and set aside.

  2. Mix the wet ingredients: In a large bowl, combine the melted butter, brown sugar, and pumpkin purée. Stir until smooth, then whisk in the eggs and vanilla extract.

  3. Prepare the dry ingredients: In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt until evenly combined.

  4. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture in small batches, stirring gently after each addition until just combined. Avoid overmixing.

  5. Make the spiced swirl: Scoop out about ½ cup of the batter into a small bowl. Add a pinch each of cinnamon, nutmeg, and sugar. Mix until a thick, spiced paste forms.

  6. Assemble the blondies: Pour the main batter into the prepared baking dish and spread evenly. Spoon dollops of the spiced batter over the top, then use a knife or skewer to swirl and create a marbled effect.

  7. Bake: Place in the oven and bake for 20–30 minutes, or until a skewer or butter knife inserted into the center comes out clean.

  8. Cool and serve: Allow the blondies to cool completely in the pan before slicing. Serve plain, or drizzle with glaze icing or top with maple whipped cream.

Tip: While delicious warm from the oven, the texture improves after resting. Once cooled, cover and store at room temperature overnight for the best flavor and chew.
